Ingredients

  • ½ cup 45 g unsweetened cocoa powder
  • ½ cup 120 ml neutral oil
  • 1 cup 200 g granulated sugar
  • 2 large eggs at room temperature
  • 2 teaspoons vanilla extract
  • 1 cup 125 g all-purpose flour
  • 1 teaspoon baking powder
  • ¼ teaspoon fine sea salt
  • ¾ cup 90 g powdered sugar, for rolling

Equipment

  • Large mixing bowl
  • Whisk and rubber spatula
  • Measuring cups and spoons (or kitchen scale)
  • Fine-mesh sieve
  • Small cookie scoop or tablespoon
  • Shallow bowl for powdered sugar
  • 2 baking sheets
  • Parchment paper
  • Wire cooling rack

Method

  1. In a large bowl, whisk the cocoa powder, oil and granulated sugar until smooth and glossy.
  2. Whisk in the eggs one at a time, then add the vanilla. Whisk for about 1 minute, until thick and shiny.
  3. Sift the flour, baking powder and salt over the bowl. Fold with a spatula until no dry flour remains. The dough will be soft and sticky.
  4. Cover the bowl and refrigerate for at least 2 hours, or up to 3 days, until the dough is firm enough to roll.
  5. Heat the oven to 350°F (175°C) and line two baking sheets with parchment paper.
  6. Scoop the dough by the tablespoon and roll it into balls between your palms.
  7. Roll each ball in the powdered sugar until thickly coated, let it sit for a minute and roll again for a heavy coat.
  8. Place the balls 2 inches apart on the baking sheets. Don’t flatten them.
  9. Bake one sheet at a time for 10 to 12 minutes, until the cookies have puffed and cracked and the edges look set, while the centers still look slightly soft.
  10. Cool on the pan for 5 minutes, then move to a wire rack to cool completely.

Notes

  • Chill the dough for at least 2 hours so it’s easy to roll and the cookies crack well.
  • Coat the dough balls twice in powdered sugar for a snowy look.
  • Don’t flatten the balls before baking.
  • Weigh the flour. Too much makes cakey, dry cookies.
  • Store in an airtight container with parchment between layers for 4 to 5 days.
  • Freeze uncoated dough balls for up to 3 months. Thaw, roll in sugar and bake.
  • Contains wheat and eggs. The dough has no dairy, but check cocoa and powdered sugar labels.
