Ingredients

  • 6 slices thick-cut bacon chopped
  • 3 tablespoons unsalted butter
  • 1 medium yellow onion diced
  • 3 garlic cloves minced
  • ⅓ cup 42 g all-purpose flour
  • 4 cups 950 ml chicken broth
  • 2 cups 480 ml whole milk
  • 2½ lb 1.1 kg russet or Yukon Gold potatoes, peeled and cut into ¾-inch cubes
  • 1 teaspoon salt plus more to taste
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • 1½ cups 150 g shredded sharp cheddar cheese
  • ½ cup 120 g sour cream
  • Extra cheddar bacon, sliced green onions and sour cream, to serve

Equipment

  • Large Dutch oven or heavy pot (5 to 6 quarts)
  • Sharp knife and cutting board
  • Vegetable peeler
  • Wooden spoon and whisk
  • Potato masher or immersion blender
  • Box grater
  • Ladle
  • Measuring cups and spoons

Method

  1. Cook the bacon in a large pot over medium heat for 8 to 10 minutes, until crisp. Move it to a paper towel-lined plate and pour off all but 1 tablespoon of the fat.
  2. Add the butter and onion to the pot and cook for 5 to 6 minutes, until soft and translucent. Add the garlic and cook for 1 minute.
  3. Sprinkle in the flour and stir for 1 minute.
  4. Slowly whisk in the broth and milk, scraping the bottom of the pot, until smooth.
  5. Add the potatoes, salt, pepper and garlic powder. Bring to a gentle simmer, then cook partially covered for 15 to 20 minutes, stirring now and then, until the potatoes are very tender.
  6. Mash some of the potatoes right in the pot until the soup reaches the thickness you like, leaving some chunks.
  7. Reduce the heat to low. Stir in the cheese a handful at a time until melted.
  8. Remove the pot from the heat and stir in the sour cream and half of the bacon. Taste and adjust the salt and pepper.
  9. Ladle into bowls and top with the remaining bacon, extra cheese, green onions and sour cream.

Notes

  • Use russet or Yukon Gold potatoes for the best thickness and flavor.
  • Mash some potatoes to thicken the soup instead of adding extra flour.
  • Add the cheese over low heat and the sour cream off the heat to keep the soup smooth.
  • Season at the end, since bacon, cheese and broth all add salt.
  • Store in the fridge for up to 4 days. Reheat gently, with a splash of milk, to 165°F (74°C).
  • For freezing, freeze the base before adding the cheese and sour cream, for up to 2 months.
  • Contains milk, wheat and pork.
