Ingredients

  • 1 cup 227 g unsalted butter, cool but soft (about 65°F / 18°C)
  • ¾ cup 150 g light brown sugar, packed
  • ½ cup 100 g granulated sugar
  • 1 large egg
  • 2 egg yolks
  • 2 teaspoons vanilla extract
  • 2½ cups 315 g all-purpose flour
  • 1 teaspoon cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 2 cups 340 g semi-sweet chocolate chunks or chopped chocolate bars, plus extra for the tops
  • Flaky sea salt for finishing (optional)

Equipment

  • Hand mixer or stand mixer
  • Medium bowl
  • Kitchen scale
  • Rubber spatula
  • Large rimmed baking sheet
  • Parchment paper
  • Measuring cups and spoons
  • Wire cooling rack
  • Round cookie cutter or wide glass (optional)
  • Sharp knife and cutting board

Method

  1. Using a hand or stand mixer, beat the butter, brown sugar and granulated sugar on medium speed for about 3 minutes, until combined and slightly fluffy.
  2. Add the egg, egg yolks and vanilla. Beat on medium for 1 minute, scraping the bowl once, until smooth.
  3. In a medium bowl, whisk the flour, cornstarch, baking soda, baking powder and salt.
  4. Add the dry ingredients to the mixer bowl in two additions, mixing on low speed until just combined.
  5. Fold in the chocolate by hand with a spatula.
  6. Weigh the dough into 100 g balls (about 3½ oz). Roll each into a tall, rounded ball and place on a plate or tray. Cover and refrigerate for at least 1 hour, or up to 72 hours.
  7. Heat the oven to 350°F (175°C). Line a large baking sheet with parchment paper.
  8. Place 6 chilled dough balls on the sheet, about 3 inches apart. Don’t flatten them. Press a few extra chocolate pieces on the tops.
  9. Bake for 14 to 16 minutes, until the edges are golden and set and the centers look soft and slightly underdone.
  10. While still hot, place a round cutter or glass around each cookie and swirl gently to round the edges (optional).
  11. Sprinkle with flaky salt. Rest the cookies on the sheet for 10 minutes, then move them to a wire rack.

Notes

  • Weigh the flour and the dough balls for the most consistent results.
  • Butter should be cool but soft. Warm butter makes cookies spread too much.
  • Bake the dough straight from the fridge so it keeps its height.
  • Chilling for 24 hours gives a deeper caramel flavor.
  • For an even chewier cookie, replace ½ cup of the all-purpose flour with bread flour.
  • Pull the cookies out while the centers still look slightly soft. They keep cooking on the hot pan.
  • Store baked cookies in an airtight container for 4 to 5 days, or freeze for up to 3 months.
  • To freeze the dough, freeze the balls on a tray, then store in a bag. Bake from frozen and add 2 to 4 minutes.
  • Contains wheat, milk and egg.
Tip: Bake the dough straight from the fridge. Cold dough spreads slowly, which is what keeps the cookies tall.
